It is a malty sweetener with quite a thick consistency, but not overly sweet.
Yacon Syrup is one of my all time favourite sweeteners but has been quite difficult to find recently. Luckily I have found a great supplier and my new bottle arrived yesterday.
If you are looking for a healthy sweetener then you may want to choose yacon syrup as it is one of the healthiest on the planet! The reason for this is because yacon contains sugars called fructooligosaccharides. These are sugars that taste sweet but not recognised by the body and therefore has no impact on blood sugar, plus it is high in antioxidants.
It is said to be suitable for diabetics (you may still want to check with your GP first), and has a glycemic index of 1.
Yacon is a Peruvian vegetable and is looks similar to a parsnip.
I love to use yacon syrup to replace golden syrup as a healthier option when making flapjacks and in raw chocolate. It tends to make the chocolate a little more truffle like but still tastes delicious, especially when you add doTERRA Wild Orange or Peppermint oil for extra flavour!
